Cowboy Caviar

Grab a chip and dig into this fresh, flavor-packed Cowboy Caviar with Mi Niña Organic Blue Corn Sea Salt Tortilla Chips.

Ingredients:

- 3 Roma tomatoes seeds removed, diced

- 2 ripe avocados diced

- 1/3 cup red onion diced

- 15 oz black beans rinsed & drained

- 15 oz black eyed peas rinsed & drained

- 1 1/2 cups frozen sweet corn thawed

- 1 bell pepper diced

- 1 jalapeno pepper

- 1/3 cup cilantro

Dressing:

- 1/3 cup olive oil

- 2 tbsp lime juice

- 2 tbsps red wine vinegar

- 1 tsp sugar

- 1/2 tsp salt & 1/2 tsp pepper

- 1/4 tsp garlic powder

For serving:

- Mi Niña Organic Blue Corn Sea Salt Tortilla Chips

Instructions 

1. Combine tomatoes, avocado, onion, black beans, black eyed peas, corn, bell pepper,

jalapeño, and cilantro in a large bowl and toss/stir to combine. 2. In a separate bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.

3. Pour dressing over other ingredients, toss well
